SUGGESTED PREP OF CORN:
The best way to eat summer corn is off the cob: first, slice kernels off of the cob and pour into a skillet that has a a little butter or olive oil to coat (we love the Mauviel M'Heritage copper skillets available at Sur la Table!); second, sautee for 5 minutes with a little salt & pepper. Add a fresh twist of flavor with a chiffonade of basil, chopped heirloom tomatoes, a little cumin, or some smoked paprika.
If you prefer creamed corn, puree a portion of the kernels in a blender with a little half and half or heavy cream, then add into the skillet.
